A Perfect Keto Beef Jerky Recipe

Beef Jerky is great as a stand-alone treat, but craft beef jerky also makes an excellent ingredient in a few great recipes.    At Jerky Subscription, we often have a surplus of Jerky and like to figure out creative ways to use it during meals and to create delicious side dishes.

What’s even more exciting is that because we have such a variety of different flavors, using the same recipe with the different flavors of craft beef jerky results in brand new experience for your taste buds.   

Craft Beef Jerky & Zoodles Pasta

If you are not familiar with “zoodles” it’s simply zucchini instead of noodles.     You can sometimes buy these at your local grocery store, but making them is pretty easy too.   We’ll include the instructions in this recipe, which can obviously be skipped if you opt to buy them pre-cut.   

Ingredients

  • 1 tbsp of olive oil
  • 1/2 cup of your favorite jerky, cut into small pieces
  • 1/4 cup yellow onion, diced
  • 2 tsp garlic, thinly sliced
  • 1/4 tsp crushed red pepper (optional)
  • 2 cups zoodles
  • 1/2 cup white wine
  • 2 cups fresh baby spinach
  • 1/8 cup chopped up sun-dried tomatoes
  • 2 tbsp parmesan cheese, shredded (optional)

Instructions

Step 1
You’ll need one medium-sized zucchini per person.  Cut the zucchini in half lengthwise. Remove the seeds with a spoon and slice the halves very thinly with a potato peeler or use a spiralizer. Add to boiling water for 1 minute.

Step 2
Heat olive oil in large nonstick skillet over medium heat. Add jerky, onion, garlic, and red pepper. Cook 3 to 5 minutes or until beef jerky is tender.

Step 3
Add cooked zoodles to skillet. Cook 1 to 2 minutes until heated through.

Step 4
Add wine. Cook 4 minutes until liquid is almost evaporated. Remove from heat.

Step 5
Add spinach.  Add sun-dried tomatoes. Toss mixture until spinach is slightly wilted. Garnish with parmesan cheese.
